Looking for a delicious pasta sauce that is quick to prepare? This sauce is rich in protein, fibre, iron, and Vitamin C.

In a frying pan, brown one chopped onion in some olive oil. Add 500 g of chopped chicken thigh fillets, and allow to brown. Add one 440 g tin of chopped tomatoes, a 400 g tin of chickpeas, drained, 1-2 teaspoons of dried oregano and season with cracked black pepper. Allow to simmer. When the chicken is tender add 4 cups of baby spinach and allow to wilt.

Stir through your favourite pasta and enjoy!
